Kashmiri Chai Ingredients

Main Ingredients
- 2 tsp Authentic Kashmiri green tea leaves (Noon Chai patti)
- 4 cups Cold water
- ¼ tsp Baking soda (sodium bicarbonate)
- ½ tsp Rock salt (or to taste)
- 1½ cups Full-fat whole milk
- ½ cup Ice-cold water (for shocking)

- 3–4 Green cardamom pods (lightly crushed)
- 1 small Cinnamon stick
- 2 tbsp Crushed pistachios (for garnish)
- 2 tbsp Slivered almonds (for garnish)
- Optional A few strands of saffron

How to Make Kashmiri Chai
Follow these steps carefully to achieve the perfect pink color and authentic Noon Chai flavor.
Boil the Kashmiri Tea
Add 2 tsp of authentic Kashmiri green tea leaves and 4 cups of cold water to a heavy-bottomed saucepan. Place over medium-high heat and bring to a rolling boil. Allow it to boil actively for 8–10 minutes to develop a deep, concentrated brew.
Add Baking Soda & Vigorously Boil
Once the tea is boiling, add ¼ tsp of baking soda. Stir well — you'll see the tea turn a reddish-brown color. This is the alkaline reaction that creates the pink magic. Continue to boil for another 5–7 minutes, stirring occasionally.
Shock the Tea with Cold Water

Add Milk, Salt & Spices
Return the pot to low-medium heat. Pour in 1½ cups of full-fat milk. Add ½ tsp of rock salt, the lightly crushed cardamom pods, and the cinnamon stick. Stir gently and watch the color transform into a beautiful, creamy pink.
Strain, Garnish & Serve
Strain the Kashmiri Chai through a fine mesh strainer into individual cups. Top generously with crushed pistachios and slivered almonds. Optionally add a pinch of saffron or a rose petal for a royal finish. Serve immediately while hot!
