Kashmiri cuisine stands apart for its use of whole spices, especially Kashmiri red chilli (vivid colour, mild heat), Mongra saffron, shahi jeera and dry ginger. Authentic meat dishes in the Wazwan tradition are cooked without onions or garlic, using slow-braising that develops extraordinary depth of flavour.
Mongra saffron is the highest grade of Kashmiri saffron. Only the deep red stigma is used. It carries a Geographical Indication (GI) tag certifying its origin in Pampore, Kashmir. It has the highest crocin (colour), safranal (aroma) and picrocrocin (flavour) content of any saffron in the world.
